This is my new husband’s favorite dish!! Very simple – just country style pork ribs, a refrigerated bag of sauerkraut, Yukon gold potatoes, and an onion. I’m 100% Lithuanian on my dad’s side and this was a dish they would make but I think I improved it a bit. It’s so comforting….so homey and sauerkraut is good for your gut.
Old World Pork Ribs and Sauerkraut
Yield 4 servings
2 pounds country-style pork ribs
2 pound bag of refrigerated sauerkraut (I like the Krispy brand)
1 onion, quartered
1 pound Yukon gold potatoes, roughly chopped
1 bay leaf
1 teaspoon onion powder (more if you's like)
kosher salt and freshly ground black pepper
- Put all of the ingredients in a Dutch oven or other sturdy pot and add water to cover. Bring to a boil and simmer for 2 hours.
